Recipe for lentil and tomato soup
Kate’s Lentil and Tomato Soup Recipe from Escape to the Farm serves four and is pretty easy to make.
1 small onion, peeled and finely diced
1 clove of garlic, peeled and grated or very finely chopped
2 cm piece of ginger, peeled and grated or very finely chopped
1 tbsp cumin
1 tbsp garam masala
200 g red, yellow or orange lentils, rinsed
1 vegetable stock cube, dissolved in 1 liter of boiling water
500 g passata
160 ml tin coconut cream
Sea salt and freshly ground black pepper
To prepare, heat a good dash of oil in a large heavy-based saucepan over medium heat.
Add the onion and a good pinch of salt and sweat for five minutes or until tender.
Next, add the garlic and ginger, mix and cook over low heat for five minutes or until flavored and soft but not colored.
Add the spices and stir for a minute or two.
Then add the lentils and mix them together so that they are coated in the spice mixture.
Pour in the vegetable broth, passata, and coconut cream and stir everything together before simmering over low heat for 25-30 minutes. Stir every now and then until the lentils are soft.

Escape to the farm with Kate Humble on C5: Series Two, Episode Three
Kate is in the middle of the lamb season at Monmouthshire Farm.
While farmer Tim takes on the busy day shift in the lamb shed, Kate goes through the night.
She is up at 4 a.m. to deal with a dangerously problematic ewe.
While she is struggling with a difficult birth, there is a lot of sweat and tears.
Kate fights heroically to save the Lamb’s life.
Later, after working so hard, Kate is in her kitchen to feed herself, where she creates a tomato and lentil soup (see recipe above).
She also does a bit of foraging with her friend Liz and takes her Welsh sheepdog Teg up a hill to Devil’s Pulpit – with spectacular views of the Wye Valley.
